Navratri calls for food that’s clean, simple, and full of flavour. And nothing does it better than this Aloo Ki Sabzi that's not just so simple to make but is so delicious- specially when paired with pooris. 

This vrat-friendly sabzi is a classic - comforting, wholesome, and ready in under 30 minutes. Made using CURRYiT Ginger Paste and CURRYiT Tomato Puree, it’s that perfect balance of convenience and tradition.

Ingredients

  • 3-4 medium potatoes, peeled & cubed

  • 2 tbsp ghee

  • 1 tsp CURRYiT Ginger Paste

  • 3-4 tbsp CURRYiT Tomato Puree

  • ½ tsp red chilli powder 

  • Salt (sendha namak), to taste

  • 2-3 cardamom pods, slightly crushed

  • Water, as needed


How to Make Aloo Ki Sabzi

  1. Heat ghee in a pressure cooker or pan.

  2. Add CURRYiT Ginger Paste, sauté till fragrant.

  3. Mix in CURRYiT Tomato Puree, chilli powder, and cardamom. Cook till it thickens.

  4. Add potatoes, salt, and water to cover.

  5. Pressure cook for 2 whistles or simmer till potatoes are soft.

  6. Mash a few pieces gently to thicken the gravy and adjust the consistency.

Serve hot with vrat ki poori or samak chawal.

Squeeze in a dash of lemon or sprinkle some black pepper right before serving - it lifts the flavours beautifully.
