So, you’ve finally decided to be that person. Protein goals, balanced bowls, making better food choices - the whole thing.
We respect it.
But if your idea of a protein bowl is grilled paneer sitting on a pile of lettuce, we have a better plan.
This Paneer Protein Bowl brings together crispy paneer, buttery masala, spring onion rice and a crunchy fresh salad. Basically, everything you want in a proper meal, just arranged in a bowl and looking far more complicated than it actually is.
And yes, it’s an easy protein recipe. Here’s how to make it.
Step 1: Get the paneer crispy
Sauté paneer cubes in a little oil until golden and crisp around the edges.
Not “technically cooked” golden. Properly golden. The kind you’ll want to eat straight from the pan.
Step 2: Add the peppers
Throw in chopped red, yellow and green bell peppers, season with salt and toss everything together.
Let the peppers cook for a few minutes while keeping a little of their crunch.
Step 3: Bring in the Masala
Add CURRYiT Dhaba Butter Masala and coat the paneer and peppers well.
Cook for a few minutes until the masala clings to everything nicely.
P.S - This is also the point where your “healthy lunch” starts smelling suspiciously like something you’d order at a restaurant.
Step 4: Make the rice
In another pan, toss cooked rice with finely chopped coriander leaves and drizzle it with some lemon juice. Stir-fry for a couple of minutes.
That’s your base sorted.
Step 5: Build the bowl
Add the lemon-coriander rice first.
Place the paneer butter masala and peppers on the side.
Step 6: Add the fresh stuff
Fill the remaining space with sweet corn, chopped tomatoes, onions, avocado and shredded lettuce… and that’s it.
