Ha! What a joke, you must be thinking. After all, who hasn't ever heard of these famous legumes? They are such an integral part of Indian cuisine that we food lovers just can't live without them. A rich source of iron, chickpeas are full of nutrients and taste so good… No wonder when anyone suggests chole bhature for dinner, our mouth immediately starts to drool. Many might think Chole is just a simple Indian dish, but oh boy! You're in for a spicy surprise. Here we're bringing recipes from across India to try not just one but 3 different types of Chhole masala for you to feast (AND a magic trick to make each of these in just 15 minutes!).


1. Amritsari Chole

Amritsari Chole is a spicy and delicious recipe that is very popular in Amritsar. They say if you have been to Amritsar and never tried Amritsari Chole with Amritsari Chole Kulche then you have missed a lot.


Traditionally, the large size chickpeas, known as Kabuli Chana, are used to make this dish. The spices and aromatics, when combined with boiled chickpeas, topped with coriander leaves, and ginger juliennes make it irresistible. Serve amritsari chole with kulcha or bhatura or puri or naan, paratha with lassi or pickle on the side, and you're sure to satisfy your taste buds. Here's the recipe (takes up to 2 hours):


Step 1. Dry roast all the spices (cardamom, cinnamon, cloves, cumin, dried coriander, dried red chillies, bay leaves) and grind them into a powder and mix them together.
Step 2. Soak chole overnight. Boil them with dried amla, baking soda, and salt.
Step 3. Heat oil in an iron kadai, add heeng and then add onion till golden brown. Add ginger, garlic, and chillies. Add tomatoes, turmeric, chilli powder, the powder made in step 1 and coriander powder.
Step 4. Once the masala leaves oil add in the boiled chole. Cook them without much water till they leave the oil. Press them gently to mash some of them to make them thick. Add amchur and a dash of tamarind water, salt, black salt, and water. Now let it boil and thicken up the chickpea stew. 
Step 5. Check and adjust the seasoning, add diced potato, paneer, and chopped coriander to garnish.
Step 6. Separately heat ghee and add chilli powder, now add it to the chole and serve them hot.

This is the same as Amritsari Chole but in Delhi style. Delhi's chickpeas are bold, loud, and unapologetically spicy. One bite and you'll be screaming for mercy and asking for seconds at the same time. Don't forget to grab some bhature or puris for the full desi experience.
